Daniel Rose came to France from Chicago to attend University but he didn’t speak the language. So he took a job in a restaurant and his life changed forever. Now he’s the Chef-Owner of Spring, « La Bourse et la Vie », « Chez La Vieille » in Paris – and « Le Coucou NYC« – June 2016.

After working in some of the most respected French kitchens (Bocuse, Meurice) he opened his first restaurant in 2006 in the then gritty 9th arr called Spring, a 16 seat restaurant where he used fresh seasonal produce to cook for a small group of people. Without fancy silver cloche service, all guests were served the at the same time from the open kitchen. “Let’s Serve Happiness” was his philosophy.

Hard to believe that seven years ago he relocated the restaurant to a historic 3 story location (two of them are underground) near the Louvre, now one of Paris’ most polished and popular restaurants. Early this year he opened his second restaurant, La Bourse et La Vie bistrot near the Palais Royal. Immediately after, he purchased (with business partner Restaurateur Stephen Starr) the historic Chez La Vieille across the street from his Spring restaurant where a team of professionals are currently underway designing a Daniel version in keeping with its historic bones.

Daniel is now taking on New York City, again with Starr, where his French “Le Coucou” Restaurant will debut in June of this year. It will be the first time he has cooked professionally in the United States.
